Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 8 ounces cream cheese softened
  • 1/2 cup buffalo sauce
  • 1 tablespoon ranch seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/4 cup sliced green onions
  • 1/4 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Method
 

  1. Add chicken to slow cooker
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. Add the creamy ingredients
  4. Add the cream cheese, buffalo sauce, ranch seasoning, chicken broth, garlic powder, and black pepper on top of the chicken.
  5. Slow cook
  6. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken is fully cooked and easy to shred.
  7. Shred the chicken
  8. Use two forks to shred the chicken directly in the slow cooker.
  9. Stir everything together
  10. Mix the shredded chicken well with the cream cheese and sauce until creamy and fully combined.
  11. Add cheese and bacon
  12. Stir in the shredded cheddar cheese and most of the crumbled bacon. Save a little bacon for topping.
  13. Finish and serve
  14. Cover for 5 to 10 minutes so the cheese melts completely. Top with green onions and remaining bacon before serving.

Notes

  • For a spicier version, add extra buffalo sauce.
  • Chicken thighs can be used instead of chicken breasts for a richer flavor.
  • If the mixture is too thick, stir in 1 to 2 tablespoons of extra chicken broth.
  • Serve in lettuce wraps, over cauliflower rice, or with steamed vegetables for a keto meal.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
