Ingredients
  

  • 1 ½ lbs smoked sausage sliced
  • 3 medium zucchini chopped
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can 14.5 oz diced tomatoes, drained
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper optional
  • 2 tbsp chopped fresh parsley

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook until lightly browned.
  3. Add onion, bell pepper, and garlic. Sauté for 3–4 minutes until softened.
  4. Stir in tomato paste, Cajun seasoning, smoked paprika, oregano, thyme, salt, and pepper.
  5. Add chicken broth and diced tomatoes. Stir well.
  6. Bring soup to a gentle boil, then reduce heat and simmer for 15 minutes.
  7. Add chopped zucchini and cook for another 10–12 minutes until tender.
  8. Taste and adjust Cajun seasoning if needed.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Use sugar-free smoked sausage to keep this recipe keto-friendly.
  • Add heavy cream for a creamy Cajun sausage soup variation.
  • For slow cooker preparation, combine all ingredients except zucchini and cook on LOW for 5–6 hours. Add zucchini during the last 30 minutes.
  • Store leftovers in an airtight container for up to 4 days.
