Ingredients

  • 4 pounds beef brisket
  • 1 tablespoon olive oil or avocado oil
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 3/4 cup no-added-sugar keto BBQ sauce divided

Method

  1. Trim any very thick exterior fat from the brisket, leaving a thin fat cap.
  2. In a small bowl, combine smoked paprika, salt, garlic powder, onion powder, chili powder, cumin, and black pepper.
  3. Rub the brisket with olive or avocado oil, then coat it evenly with the seasoning mixture.
  4. For extra flavor, sear the brisket in a hot skillet for 2–3 minutes per side. This step is optional.
  5. Pour beef broth, Worcestershire sauce, and apple cider vinegar into the slow cooker.
  6. Place the brisket in the slow cooker and spread 1/2 cup of the keto BBQ sauce over the top.
  7. Cover and cook on LOW for 8–10 hours, or until the brisket is very tender and a fork slides into the thickest part easily.
  8. Remove the brisket and let it rest for 15–20 minutes.
  9. Slice across the grain and brush with the remaining BBQ sauce before serving.

Notes

For a stickier BBQ finish, brush the cooked brisket with extra sugar-free BBQ sauce and place it under the broiler for a few minutes before slicing. The original recipe specifies cooking mainly on LOW for 8–10 hours.
