Method
- Trim any very thick exterior fat from the brisket, leaving a thin fat cap.
- In a small bowl, combine smoked paprika, salt, garlic powder, onion powder, chili powder, cumin, and black pepper.
- Rub the brisket with olive or avocado oil, then coat it evenly with the seasoning mixture.
- For extra flavor, sear the brisket in a hot skillet for 2–3 minutes per side. This step is optional.
- Pour beef broth, Worcestershire sauce, and apple cider vinegar into the slow cooker.
- Place the brisket in the slow cooker and spread 1/2 cup of the keto BBQ sauce over the top.
- Cover and cook on LOW for 8–10 hours, or until the brisket is very tender and a fork slides into the thickest part easily.
- Remove the brisket and let it rest for 15–20 minutes.
- Slice across the grain and brush with the remaining BBQ sauce before serving.
Notes
For a stickier BBQ finish, brush the cooked brisket with extra sugar-free BBQ sauce and place it under the broiler for a few minutes before slicing. The original recipe specifies cooking mainly on LOW for 8–10 hours.
