Ingredients

  • 4 lb boneless pork shoulder
  • 1 tbsp olive oil or avocado oil
  • 2 tsp smoked paprika
  • tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp black pepper
  • ½ cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 1 cup no-added-sugar BBQ sauce divided

Method

  1. Pat the pork shoulder dry and trim only the very thick exterior fat.
  2. Mix smoked paprika, salt, garlic powder, onion powder, chili powder, cumin, and black pepper.
  3. Rub the pork with oil, then coat it evenly with the seasoning mixture.
  4. If desired, sear the pork for 2–3 minutes per side.
  5. Pour chicken broth, apple cider vinegar, and Worcestershire sauce into the slow cooker.
  6. Add the pork and spread ½ cup BBQ sauce over the top.
  7. Cover and cook on LOW for 8–10 hours, until the pork shreds easily.
  8. Remove the pork and rest for about 15 minutes.
  9. Shred using two forks.
  10. Mix the pork with a little cooking liquid and the remaining BBQ sauce.

Notes

Add only enough BBQ sauce to coat the meat instead of soaking it. This helps control carbs and keeps the pork flavor noticeable.
