Method
- Heat the olive oil in a large skillet over medium-high heat.
- Add the ground beef and diced onion. Cook until the beef is browned, breaking it apart as it cooks.
- Add the minced garlic and cook for about 30 seconds.
- Transfer the browned beef mixture to the slow cooker.
- Add the diced tomatoes, tomato sauce, beef broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne if using.
- Stir everything together until evenly combined.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- Stir the chili and taste before serving. Adjust salt, pepper, or chili powder as needed.
Notes
Start with only ½ cup of beef broth. Ground beef and tomatoes release additional liquid during slow cooking, so adding too much broth can make the chili watery.
