Ingredients
  

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • ½ small onion diced
  • 3 garlic cloves minced
  • 1 can 14–15 ounces diced tomatoes
  • 1 can 8 ounces tomato sauce, no added sugar
  • ½ cup beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground beef and diced onion. Cook until the beef is browned, breaking it apart as it cooks.
  3. Add the minced garlic and cook for about 30 seconds.
  4. Transfer the browned beef mixture to the slow cooker.
  5. Add the diced tomatoes, tomato sauce, beef broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne if using.
  6. Stir everything together until evenly combined.
  7. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  8. Stir the chili and taste before serving. Adjust salt, pepper, or chili powder as needed.

Notes

Start with only ½ cup of beef broth. Ground beef and tomatoes release additional liquid during slow cooking, so adding too much broth can make the chili watery.
