Ingredients
  

  • 1 1/2 pounds ground beef
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1/4 cup almond flour
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Creamy Garlic Parmesan Sauce
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup cream cheese softened
  • 3/4 cup grated parmesan cheese
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For Garnish
  • 1 tablespoon chopped parsley
  • Extra parmesan cheese for serving

Method
 

  1. In a large bowl, combine the ground beef, parmesan cheese, egg, minced garlic, almond flour, Italian seasoning, onion powder, salt, and black pepper.
  2. Mix until just combined, then shape into medium-sized meatballs.
  3. Lightly grease the slow cooker and place the meatballs inside in a single layer if possible.
  4. In a saucepan over medium heat, melt the butter.
  5. Add the minced garlic and cook for 30 seconds until fragrant.
  6. Stir in the heavy cream, cream cheese, parmesan cheese, chicken broth, Italian seasoning, salt, and black pepper.
  7. Cook for 2–3 minutes, stirring, until the sauce is smooth and creamy.
  8. Pour the sauce evenly over the meatballs in the slow cooker.
  9. Cover and cook on LOW for 4 hours or until the meatballs are fully cooked through.
  10. Gently stir before serving so the meatballs are coated well in the sauce.
  11. Garnish with chopped parsley and extra parmesan cheese.
  12. Serve warm.

Notes

  • You can use a mix of beef and chicken for softer meatballs.
  • If the sauce becomes too thick, add a small splash of chicken broth before serving.
  • Serve with zucchini noodles, cauliflower mash, or steamed vegetables.
  • For extra flavor, brown the meatballs in a skillet before adding them to the slow cooker.
