Ingredients
  

  • 2 lbs ground turkey
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 medium green bell pepper diced
  • 1 can 10 oz diced tomatoes with green chilies, drained
  • 3 cups chicken broth
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons taco seasoning keto-friendly
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 1 cup chopped zucchini optional

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart with a spoon.
  3. Add diced onion, garlic, and bell pepper. Cook for 3–4 minutes until softened.
  4. Transfer the turkey mixture into the slow cooker.
  5. Add diced tomatoes, chicken broth, taco seasoning, cumin, smoked paprika, chili powder, salt, and black pepper.
  6. Stir well and cover. Cook on LOW for 4 hours or HIGH for 2–3 hours.
  7. About 30 minutes before serving, add softened cream cheese, cheddar cheese, and heavy cream.
  8. Stir until the cheese melts completely and the soup becomes creamy.
  9. Add zucchini if using and cook until tender.
  10. Taste and adjust seasoning before serving.
