- Heat olive oil in a skillet over medium heat.
- Add ground turkey and cook until browned, breaking it apart with a spoon.
- Add diced onion, garlic, and bell pepper. Cook for 3–4 minutes until softened.
- Transfer the turkey mixture into the slow cooker.
- Add diced tomatoes, chicken broth, taco seasoning, cumin, smoked paprika, chili powder, salt, and black pepper.
- Stir well and cover. Cook on LOW for 4 hours or HIGH for 2–3 hours.
- About 30 minutes before serving, add softened cream cheese, cheddar cheese, and heavy cream.
- Stir until the cheese melts completely and the soup becomes creamy.
- Add zucchini if using and cook until tender.
- Taste and adjust seasoning before serving.
