- Pat chicken thighs dry and season with salt and black pepper.
- Mix Italian seasoning, oregano, paprika, and garlic powder.
- Rub the seasoning mixture evenly over the chicken thighs.

- Place chicken into the slow cooker.
- Add garlic, chicken broth, butter, and sun-dried tomatoes.
- Cover and cook on LOW for 4–5 hours until chicken is tender.
- Add heavy cream, parmesan cheese, and spinach during the final 20–30 minutes.
- Stir gently until the sauce becomes creamy and the spinach wilts.
- Garnish with fresh basil before serving.
Notes
Add the cream, parmesan, and spinach near the end of cooking to keep the sauce smooth and prevent dairy separation. For the best flavor, use freshly grated parmesan cheese.
