Ingredients
  

  • 3 –4 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 1 tbsp fresh minced garlic
  • 8 oz mushrooms sliced
  • 1 medium onion sliced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce optional, check carbs
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp butter
  • 2 tbsp chopped fresh parsley for garnish

Method
 

  1. Pat the chuck roast dry and season all sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side until browned.
  3. Transfer the roast to a slow cooker.
  4. Add sliced mushrooms, onions, and minced garlic around the roast.
  5. Mix beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary. Pour over the roast.
  6. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until the beef is fork-tender.
  7. During the last 30 minutes, add butter to the cooking liquid and stir gently to create a richer mushroom garlic sauce.
  8. Shred or slice the roast and serve with mushrooms and gravy. Garnish with fresh parsley.

Notes

  • Use chuck roast for the most tender and flavorful results.
  • For a thicker keto-friendly gravy, reduce the cooking liquid after removing the roast or add a small amount of xanthan gum.
  • Serve with mashed cauliflower, roasted radishes, or steamed green vegetables for a complete low-carb meal.
