Ingredients
  

  • 3 lb boneless or bone-in chicken thighs
  • 2 tbsp olive oil
  • 5 garlic cloves minced
  • 4 tbsp butter
  • ¾ cup grated parmesan cheese
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice optional

Method
 

  1. Pat the chicken thighs dry and season both sides with salt and black pepper.
  2. Mix Italian seasoning, oregano, garlic powder, and onion powder in a small bowl.
  3. Rub the seasoning mixture evenly over the chicken thighs.
  4. Heat olive oil in a skillet and lightly sear the chicken thighs for extra flavor.
  5. Place chicken thighs into the slow cooker.
  6. Add minced garlic, butter, and chicken broth around the chicken.
  7. Cover and cook on LOW for 5–6 hours until the chicken is tender.
  8. Add parmesan cheese during the final 20–30 minutes of cooking.
  9. Stir gently until the cheese melts into the garlic butter sauce.
  10. Garnish with fresh parsley and serve with keto-friendly vegetables.

Notes

For the best flavor, sear the chicken thighs before slow cooking. Add parmesan near the end so it melts smoothly into the garlic butter sauce without becoming grainy.
