Ingredients

  • 4 lb pork shoulder
  • 6 garlic cloves minced
  • 2 tsp ground cumin
  • tsp dried oregano
  • tsp salt
  • ½ tsp black pepper
  • ½ cup chicken broth
  • Juice of 2 limes
  • 1 tbsp orange juice
  • 1 tsp orange zest
  • 2 tbsp olive oil

Method

  1. Season the pork shoulder with garlic, cumin, oregano, salt, and black pepper.
  2. Add chicken broth, orange zest, and half of the lime juice to the slow cooker.
  3. Place the seasoned pork inside.
  4. Cover and cook on LOW for 8–9 hours, until it shreds easily.
  5. Remove the pork and rest for about 15 minutes.
  6. Shred it with two forks and discard any large pieces of excess fat.
  7. Mix in the orange juice and remaining lime juice.
  8. Add enough of the cooking liquid to keep the meat juicy.
  9. For browned edges, spread some pork on a baking sheet and broil briefly before serving

Notes

Using orange zest with only a small amount of orange juice gives the pork citrus flavor without adding a large amount of sugar.
