Method
- Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat and sear the pork chops for 2–3 minutes per side until lightly browned.
- Place the seared pork chops into the slow cooker.
- In a bowl, whisk together Dijon mustard, melted butter, minced garlic, chicken broth, heavy cream, thyme, rosemary, and parsley.
- Pour the Dijon herb sauce over the pork chops, making sure they are coated evenly.
- Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours until the pork chops are tender.
- Check that the pork reaches an internal temperature of 145°F (63°C).
- Remove pork chops from the slow cooker and spoon the creamy Dijon herb sauce over the top.
- Garnish with fresh parsley and serve warm with keto-friendly vegetables.
