Ingredients
  

  • 4 boneless pork chops about 1-inch thick
  • 2 tablespoons Dijon mustard
  • 3 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1/3 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the pork chops for 2–3 minutes per side until lightly browned.
  3. Place the seared pork chops into the slow cooker.
  4. In a bowl, whisk together Dijon mustard, melted butter, minced garlic, chicken broth, heavy cream, thyme, rosemary, and parsley.
  5. Pour the Dijon herb sauce over the pork chops, making sure they are coated evenly.
  6. Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours until the pork chops are tender.
  7. Check that the pork reaches an internal temperature of 145°F (63°C).
  8. Remove pork chops from the slow cooker and spoon the creamy Dijon herb sauce over the top.
  9. Garnish with fresh parsley and serve warm with keto-friendly vegetables.

Notes

- Searing the pork chops first adds deeper flavor and keeps the meat juicy.
- For extra creamy sauce, add a little more heavy cream during the final 15 minutes of cooking.
- Use bone-in pork chops for even more flavor and tenderness.
