- Place the chicken thighs in the slow cooker.
- In a small bowl, combine the melted butter, minced garlic, chicken broth, Italian seasoning, paprika, salt, and black pepper.
- Pour the garlic butter mixture evenly over the chicken.
- Cover and cook on LOW for 4–5 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
- Add the baby spinach during the final 10 minutes of cooking and allow it to wilt.
- Sprinkle the grated Parmesan over the chicken and spoon the garlic butter sauce over the top before serving.
Notes
Avoid cooking the chicken longer than necessary. Check the thickest piece for an internal temperature of 165°F (74°C) rather than relying only on cooking time.
