- Season the chuck roast evenly with salt and black pepper.
- Heat avocado oil in a skillet over medium-high heat.
- Sear the roast on both sides until nicely browned.
- Transfer the roast to the slow cooker.
- Add garlic, beef broth, Worcestershire sauce, rosemary and thyme.
- Arrange the mushrooms and optional radishes around the roast.
- Cover and cook on LOW for 8–9 hours, until fork-tender.
- Slice or shred the beef and spoon the cooking juices over it before serving.
