Ingredients
  

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 lb radishes trimmed and halved
  • 1 medium onion sliced
  • 5 garlic cloves minced
  • 2 cups beef broth
  • 2 tbsp butter
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • tsp salt
  • 1 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley chopped

Method
 

  1. Pat the chuck roast dry and season all sides with salt and pepper.
  2. Mix rosemary, thyme, onion powder, smoked paprika, and minced garlic.
  3. Rub the seasoning mixture evenly over the roast.
  4. Heat olive oil in a skillet and sear the roast on all sides until browned.
  5. Place sliced onions and radishes into the slow cooker.
  6. Add the seared roast on top of the vegetables.
  7. Pour in beef broth and Worcestershire sauce, then add butter.
  8. Cover and cook on LOW for 8 hours until the beef is fork tender.
  9. Remove the roast and shred or slice it.
  10. Serve with the cooked radishes and spoon the savory broth over the top.
  11. Garnish with fresh parsley before serving.

Notes

Radishes become mild and tender after slow cooking and work as a great low-carb replacement for potatoes. For the best flavor, sear the roast before adding it to the slow cooker.
