- Pat the chuck roast dry and season all sides with salt and pepper.
- Mix rosemary, thyme, onion powder, smoked paprika, and minced garlic.
- Rub the seasoning mixture evenly over the roast.
- Heat olive oil in a skillet and sear the roast on all sides until browned.
- Place sliced onions and radishes into the slow cooker.
- Add the seared roast on top of the vegetables.
- Pour in beef broth and Worcestershire sauce, then add butter.
- Cover and cook on LOW for 8 hours until the beef is fork tender.
- Remove the roast and shred or slice it.
- Serve with the cooked radishes and spoon the savory broth over the top.
- Garnish with fresh parsley before serving.
Notes
Radishes become mild and tender after slow cooking and work as a great low-carb replacement for potatoes. For the best flavor, sear the roast before adding it to the slow cooker.
