Method
- Pat the pork shoulder dry.
- Season the pork evenly with cumin, garlic powder, dried oregano, salt, and black pepper.
- Place the seasoned pork shoulder in the slow cooker.
- Pour the salsa verde around and over the pork.
- Cover and cook on LOW for 7–8 hours, or until the pork is very tender and pulls apart easily with two forks.
- Shred the pork using two forks.
- Stir the shredded pork into the cooking juices and salsa verde.
- Add the fresh lime juice just before serving.
Notes
Do not add extra water unless absolutely necessary. Pork shoulder releases moisture as it slow-cooks, and too much added liquid can weaken the salsa verde flavor.
