Method
- Brown the ground beef in a skillet over medium-high heat.
- Drain the excess grease and transfer the beef to the slow cooker.
- Add the onion, green bell pepper, garlic, diced tomatoes, tomato paste, beef broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and optional cayenne.
- Stir everything together.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours.
- For a thicker chili, remove the lid during the final 20–30 minutes of cooking.
- Taste and adjust the seasoning before serving.
Notes
Use broth conservatively because slow cookers retain moisture and too much liquid can make the chili watery.
