Ingredients
  

  • 2 1/2 lb chuck roast cut into 1-inch pieces
  • 1 tbsp avocado oil or olive oil
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 14.5- oz can diced tomatoes
  • 2 tbsp tomato paste
  • 1 1/2 cups beef broth
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1 jalapeño optional

Method
 

  1. Season the chuck roast pieces with salt and black pepper.
  2. Heat the oil in a skillet over medium-high heat.
  3. Brown the beef in batches to avoid overcrowding the pan.
  4. Transfer the browned beef to the slow cooker.
  5. Add the onion, garlic, diced tomatoes, tomato paste, beef broth, chili powder, cumin, smoked paprika, oregano, and optional jalapeño.
  6. Stir gently to combine.
  7. Cover and cook on LOW for 7–8 hours.
  8. Cook until the chuck roast pieces are fork-tender.
  9. Taste and adjust the seasoning before serving.

Notes

Keep the chuck roast pieces around 1 inch rather than cutting them very small; your article specifically recommends this for a better chunky chili texture.
