Ingredients

  • 2 lb flank steak thinly sliced
  • ½ cup low-sodium soy sauce or tamari
  • ½ cup water
  • ¼ cup keto brown sweetener
  • 1 tbsp sesame oil
  • 3 garlic cloves minced
  • 2 tsp grated fresh ginger
  • 3 cups broccoli florets
  • ½ tsp xanthan gum
  • 3 green onions sliced

Method

  1. Place the thinly sliced flank steak in the slow cooker.
  2. Whisk together soy sauce, water, sweetener, sesame oil, garlic, and ginger.
  3. Pour the sauce over the beef.
  4. Cover and cook on LOW for about 3½ hours.
  5. Add the broccoli florets.
  6. Continue cooking for 30–60 minutes.
  7. Cook only until the broccoli is tender but still holds its shape.
  8. Gradually stir in the xanthan gum.
  9. Let the sauce cook briefly until slightly thickened.
  10. Garnish with sliced green onions.

Notes

Add the broccoli near the end. Cooking it during the entire slow-cooker cycle can make it overly soft.
