Ingredients
  

  • 2 lb beef stew meat
  • 1 tbsp olive oil
  • 8 oz mushrooms sliced
  • 3 garlic cloves minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 1/4 tsp xanthan gum optional

Method
 

  1. Pat the stew meat dry and season with salt, black pepper, and garlic powder.
  2. Heat olive oil in a skillet and quickly brown the beef in batches. This step is optional.
  3. Add the sliced mushrooms and minced garlic to the slow cooker.
  4. Place the beef over the mushrooms.
  5. Pour in the beef broth, Worcestershire sauce, and Dijon mustard.
  6. Sprinkle in the dried thyme.
  7. Cover and cook on LOW for 6–8 hours, until the beef is fork-tender.
  8. If the sauce is too thin, let some liquid reduce near the end of cooking.
  9. Stir in the butter.
  10. If necessary, sprinkle in a very small amount of xanthan gum and stir until the sauce slightly thickens.

Notes

Reduce the cooking liquid before adding xanthan gum. Too much xanthan gum can make the sauce gummy.
