Ingredients
  

  • 3 lb boneless pork shoulder
  • 4 garlic cloves minced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp chili powder
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lime
  • 1/2 cup chicken broth
  • 1 bay leaf

Method
 

  1. Rub the pork shoulder with garlic, cumin, oregano, chili powder, salt and black pepper.
  2. Place the pork in the slow cooker.
  3. Add lime juice, chicken broth and bay leaf.
  4. Cover and cook on LOW for about 8 hours.
  5. Shred the tender pork and discard large pieces of excess fat.
  6. Spread the portion you want to serve onto a sheet pan.
  7. Broil briefly until the edges become browned and crispy.
  8. Serve immediately with your preferred keto toppings

Notes

Keep leftover pork unbroiled and crisp individual portions when reheating. This helps keep the stored meat moist.
