Ingredients
  

  • 4 lb pork shoulder
  • 4 garlic cloves minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • tsp salt
  • ½ tsp black pepper
  • ½ cup chicken broth
  • Zest of 1 lime
  • Juice of 1 lime
  • 2 tbsp olive oil

Method
 

  1. Cut the pork shoulder into 3–4 large pieces.
  2. Season with garlic, cumin, oregano, chili powder, salt, and black pepper.
  3. Add chicken broth and lime zest to the slow cooker.
  4. Place the seasoned pork inside.
  5. Cover and cook on LOW for 7–9 hours, until very tender.
  6. Shred the pork and toss it with some of the cooking juices and fresh lime juice.
  7. Spread some of the shredded pork onto a baking sheet.
  8. Drizzle lightly with olive oil.
  9. Broil for 3–4 minutes until the edges become browned and crisp.
  10. Mix the crispy pork with the remaining juicy shredded pork before serving.

Notes

Broil only part of the shredded pork. This gives you crisp carnitas edges without drying out the whole batch.
