Keto Slow Cooker Turkey Zucchini Chili

A lighter bean-free keto chili made with ground turkey, zucchini, tomatoes, garlic, and smoky chili spices in the slow cooker.

Ingredients
  

  • 2 pounds ground turkey
  • 1 tablespoon olive oil
  • ½ small onion diced
  • 3 garlic cloves minced
  • 1 can diced tomatoes
  • 1 cup tomato sauce no added sugar
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ¾ teaspoon salt
  • 2 medium zucchini diced

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey and diced onion.
  3. Cook until the turkey is browned and cooked through.
  4. Add the garlic and cook for about 30 seconds.
  5. Transfer the turkey mixture to the slow cooker.
  6. Add the diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, oregano, and salt.
  7. Stir until evenly combined.
  8. Cover and cook on LOW for about 4½ hours.
  9. Add the diced zucchini.
  10. Continue cooking for another 30–60 minutes, until the zucchini is tender but still holds its shape.
  11. Stir and adjust the seasoning before serving.

Notes

Do not add the zucchini at the beginning. Adding it during the final 30–60 minutes prevents it from becoming overly soft or mushy.
