Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
Add diced onion and garlic to the beef. Cook for 2–3 minutes until softened.
Stir in zucchini, bell peppers, and green chilies. Cook for another 4–5 minutes.
Add taco seasoning, smoked paprika, cumin, chili powder, salt, and black pepper. Mix well to coat the beef and vegetables.
Reduce heat and stir in cream cheese and sour cream until creamy and combined.
Transfer the mixture into the prepared baking dish.
Sprinkle cheddar and mozzarella cheese evenly over the top.
Bake for 15–20 minutes until the cheese is melted and bubbly.
Garnish with cilantro, jalapeños, avocado, or green onions before serving.
