  • 3 lb boneless or bone-in chicken thighs
  • 3 tbsp butter melted
  • 2 tbsp olive oil
  • 5 garlic cloves minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup chicken broth
  • 2 tsp dried thyme
  • 2 tsp dried parsley
  • 1 tsp rosemary
  • 1 tsp paprika
  • tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley chopped (for garnish)
  • Lemon slices for serving

Method
 

  1. Pat the chicken thighs dry with paper towels and season with salt and black pepper.
  2. In a small bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, thyme, parsley, rosemary, and paprika.
  3. Rub the lemon herb butter mixture evenly over the chicken thighs.
  4. Heat a skillet and lightly sear the chicken thighs for extra flavor.
  5. Place the chicken thighs into the slow cooker.
  6. Pour chicken broth around the chicken and add any remaining butter mixture.
  7. Cover and cook on LOW for 5–6 hours until the chicken is tender.
  8. Spoon the buttery herb sauce over the chicken before serving.
  9. Garnish with fresh parsley and lemon slices.
  10. Serve with keto-friendly vegetables like cauliflower rice, broccoli, or green beans.

Notes

For the best flavor, use fresh lemon zest along with lemon juice. Chicken thighs stay juicy during slow cooking, but avoid overcooking to maintain a tender texture. Searing the chicken before slow cooking adds a deeper buttery herb flavor.
