Ingredients
  

  • lb pork tenderloin
  • 2 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 4 garlic cloves minced
  • 2 tsp freshly cracked black pepper
  • tsp salt
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup chicken broth
  • 2 tbsp butter
  • 2 tbsp fresh parsley chopped

Method
 

  1. Pat the pork tenderloin dry and season lightly with salt and pepper.
  2. In a small bowl, combine lemon juice, lemon zest, garlic, black pepper, thyme, rosemary, and olive oil.
  3. Rub the lemon pepper seasoning mixture evenly over the pork tenderloin.
  4. Heat a skillet and sear the pork on all sides for extra flavor.
  5. Place the pork tenderloin in the slow cooker and add chicken broth and butter.
  6. Cover and cook on LOW for 5–6 hours until the pork is tender.
  7. Remove the pork and let it rest for 10 minutes before slicing.
  8. Slice the pork tenderloin and drizzle with the lemon herb cooking juices.
  9. Garnish with fresh parsley and serve with keto-friendly vegetables.

Notes

Fresh lemon zest gives the best flavor, while resting the pork before slicing helps keep it juicy and tender. For extra browning, sear the tenderloin before placing it in the slow cooker.
