Ingredients
  

  • 3 lb boneless skinless chicken thighs
  • 2 cups salsa verde sugar-free
  • 1 medium onion sliced
  • 5 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh lime juice
  • ¼ cup fresh cilantro chopped

Method
 

  1. Pat the chicken thighs dry and season with salt and black pepper.
  2. Mix cumin, smoked paprika, chili powder, and oregano in a small bowl.
  3. Rub the spice mixture evenly over the chicken thighs.
  4. Add sliced onions and minced garlic to the bottom of the slow cooker.
  5. Place chicken thighs on top of the onions.
  6. Pour salsa verde and olive oil over the chicken.
  7. Cover and cook on LOW for 5–6 hours until the chicken is tender.
  8. Remove chicken and shred using two forks.
  9. Return shredded chicken to the slow cooker and mix with the salsa verde sauce.
  10. Add lime juice and fresh cilantro before serving.
  11. Serve with cauliflower rice, lettuce wraps, avocado, or keto-friendly toppings

Notes

For the juiciest result, use chicken thighs instead of breast because they stay tender during slow cooking. Choose a salsa verde without added sugar to keep the recipe keto-friendly. Add fresh lime juice and cilantro at the end for the best flavor.
